Well, I am still a little discombobulated after our big move almost two weeks ago. I don't quite have all of my cooking staples and I haven't quite built up any kind of food storage so I am struggling with my meals a little. I always have something to eat for breakfast (since I eat almost the same thing everyday) but then lunch or dinner get a little tricky; I have something great for lunch but then have nothing for dinner.
Yesterday I had this issue. I made my delicious buffalo meatloaf for lunch and boy was it good. After I ate lunch I thought, 'but what am I going to make for dinner?' All I had were some chicken legs (not in the mood), 2 pounds of ground turkey, and not even a pound of ground beef. So I went with the most appealing meat to me and took it to the Internet. I used google and searched: 'different paleo recipes ground beef' and the first entry was entitled "80 paleo recipes with ground beef" which seemed promising. I had to sift through the hamburgers and meatloaf recipes though since I had just eaten meatloaf and didn't want anything close to that. Luckily I found this recipe for stuffed squash and I had almost all of the ingredients (I don't normally keep cheese in the house that isn't string cheese)!
Shelling out these zucchini was not as easy as it seemed. I tore some of them while I was scooping out the seeds but I still used them. I think having one of those grapefruit spoons with the serrated edges would've made this easier.
Here is my meat mixture with the already cooked zucchini. You can see the one zucchini that I totally mangled. I pretty much followed the recipe as is but I was not daring enough to add in the allspice that the author recommended. I'm having tummy issues right now anyway and I really wanted to eat this meal so I thought I would play it safe. Maybe I'll try that allspice later.
Here are my stuffed zucchini with the extra meat mixture. I can just eat that on it's own some other time. It's pretty good and not too spicy even with the red pepper flakes.
Here are the completed stuffed zucchini. Now that I have eaten them I wish that I had some cheese. I'm not sure what kind I would use (probably not havarti) but that would have made these a real treat. As it was, they were a good alternative for using ground beef when you don't want a hamburger or meatloaf. I'll probably make them again but make sure I have some cheese in the house!
