So I had a friend over one day a long while ago and we were talking about food we liked and introducing it to small children. I mentioned how much I loved oatmeal and she thought of this lovely baked oatmeal recipe and brought a copy of it to me the next time we saw each other. It took me many months to finally try it but I finally did, with some modifications. Basically I left out all the good stuff: no sugar and no salt. I must say that I enjoyed it and it felt like eating an oatmeal cake. It was almost too rich for me since I'm not used to pumpkin pie flavors in a cake. The kiddos I fed it to tried it and presumably enjoyed it too. It was a great find for us since it is pretty healthy and enjoyable too (you know, since I enjoyed it and so did the babies). And just like the recipe says, it really is good hot out of the oven or refrigerated.
