I started a new diet about three months ago. It is a diet consisting mainly of protein and vegetables with a side of a little bit of everything else. In the beginning, I was eating a lot of eggs. I like scrambled eggs and they are easy and quick. Way easier than making lunch or dinner protein foods. Well, then I began to get sick of eating scrambled eggs. Well, I don't like them any other way but I heard of these mysterious egg muffins. I thought 'well, first you scramble them and then you bake them.' So I tried them out.
I mixed about a dozen eggs with tomatoes and spices and sausage and milk. It looked appealing.

Here's what they looked like when they came out. They looked pretty good even though one of them was deformed. I inserted a toothpick and it came out clean of multiple muffins so I removed them from the oven.
Here they are, all shriveled up. I was baffled. What had happened? I decided to try one anyway. I thought they tasted good. I bagged them up to save them for the next couple of days. That, apparently, is the benefit of egg muffins. You can save them and just pop them in the microwave for a quick protein snack. Unfortunately, as I ate them, I became decreasing impressed by them, especially their consistency. I threw away seven of the ten muffins I made and vowed to never have another one (at least for a very long time and not from my kitchen).
*Note: I like scrambled eggs again because I have found a variety of protein sources to enjoy. Therefore I have no need to partake in the odd thing that is called an egg muffin.
Yeah they look kind of weird....did they come out dry?
