As luck would have it I was able to go to a church activity this week. The flier said to bring a healthy snack so I decided to try a recipe that I received from my dietician earlier this summer: Indian Guacamole. That's Indian as in India, of course. But here is a funny thing: I hate avocados. As I was chopping one up it looked like it might be moldy so I had to try a piece and it was fine, albeit disgusting in texture. So why is it that I hate avocados but enjoy guacamole? It's just one of life's great mysteries, I suppose. Here are the ingredients:
3 avocados
1/4 onion minced
1 clove garlic
1/2 tsp each of turmeric, coriander, cumin, ground mustard
1 tb lemon juice
1/4 cup chopped cilantro
You may notice there is no onion or garlic clove in my picture but there is garlic powder and onion powder which are good substitutes for the lazy cook (me). I did chop fresh cilantro though...I love cilantro.
All you have to do is mash the avocados (I used a fork) with all the other ingredients and you are done. Very easy peasy. You can season it further with salt or other spices as well.
I served my guacamole with jicama, cucumbers, and sweet potato chips...is there anything more healthy?
By the end of the evening nearly everything was gone so it must have been good. Though I must confess I brought this because I knew I could eat it so I probably consumed a good portion of the plate.
Will be giving this a try....for sure!
