I like meatloaf. My husband doesn't like meatloaf. So I was on the lookout for a meatloaf recipe that he might enjoy. Someone mentioned a "Mexican meatloaf" so I asked the ingredients: Some of them were meat, taco seasoning, nacho cheese doritos, salsa and cheese. I wasn't quite sure I liked the sound of that but it did give me an idea of my own: I could just make up a recipe! So I did. I lovingly call it Taco Meatloaf. My new recipe is loosely based on my favorite old recipe. It has a base of 2 eggs, 1 pound of meat and 1/3 c almond flour. If you prefer a different base-for example, 1 pound meat, 1/2 c oats, and 1 egg- then by all means, substitute that. Here is my recipe:
1 pound ground hamburger or turkey
2 eggs
1/3 c almond meal/flour
1 tbsp dried onion
3 tbsp chopped green onion
2/3 c salsa inside
3 tsp taco seasoning
1/3 c mozzarella cheese inside
1/3 c salsa on top
As much mozzarella cheese on top as you want
Mix everything together except the 1/3 salsa on top (use any type of salsa you like). Put it into your greased meatloaf pan. Spread 1/3 c salsa on top and sprinkle with mozzarella cheese. Bake at 350 for 1 hour. Enjoy. Beware: this meatloaf has a lot of liquid with it. I've only made it once so I'm not sure if it's the fat from the meat or liquid from the salsa or what. It didn't matter. The meatloaf was delicious and my husband really enjoyed it.
