I've been meaning to find some new recipes to try but I just haven't found the time to think about it. Well I got to go out to a birthday dinner with a friend of mine who was also celebrating her birthday a few days after mine. Anyway, she got some sort of lime garlic chicken dish. I thought that combination sounded quite interesting so I was inspired to google it and the first recipe that popped up was this one. It looked like something I could handle so I made it last week. It was pretty good but I will say it was a little too garlicky if you can believe that.
Here it is seasoned and ready to cook. I kind of like that it is a stovetop chicken dish. I did not use butter to cook the chicken in; I just used the olive oil. You can see that I used five boneless thighs instead of four breasts halves. I did not add more spices to the recipe and it turned out great. It was a little over one pound of meat.
Here it is after I added the garlic lime sauce. One lime makes approximately one tablespoon of juice.
The finished product. For some reason I love eating broccoli with any chicken dish. It was nice and crispy on the outside. Yum!
