Two new recipes in one week! Stunning! Yesterday I was dying for some soup but didn't really have the ingredients (or time) for any of my soup recipes so I started googling and found this awesome recipe that I had most of the ingredients for. I can't say I followed the recipe exactly but I did use it as a nice guide and got a delicious soup as a result.
I used some orange bell pepper that I had on hand, one large onion, and some green onions that I also had laying around. I also threw in some red pepper flakes, red pepper and garlic and onion powder (I did not measure these things) into the mix and let them cook in oil until softened.
Then I added my ham steak that I cut into small pieces and the 32 ounces of chicken broth I had on hand. I let that come to boiling and added my 4 beaten eggs to it to finish it off. I did not use any sesame oil since I didn't have any. This recipe totally hit the spot and it is definitely going in my favorite book of handwritten recipes.
This one sounds like a great back up to homemade chicken noodle soup when you have a lovely cold! I will be having to try it out soon.
