So my parents made some turkey soup while they were here back in January and they put some quinoa in, which was good. But it meant that they left almost a full box of quinoa at my house. I don't usually use quinoa but decided to try it out. There was a recipe on the box that looked pretty tasty so I made that as my first vegetarian meal. I had this idea to make more vegetarian meals because meat is expensive but this is the only one I've made so far.
There were three components to this meal. The lime quinoa, the red pepper mixture and the garlic beans. I must say that it took a lot of work to make so many things for one dish and I still had to make a vegetable (in this case salad). So three pots on the stove and making a salad and taking care of the kiddos. Good thing the meal was tasty and I would make it again if I had a day when I had the time and energy. The kids ate parts of it but I don't think they loved any of it. If you want the recipe buy a box of Ancient Harvest gluten free traditional quinoa.
I think I'll pass on that one...
