Creamy Dairy Free Pesto

So I got a cookbook on interlibrary loan called Cooking for Isaiah by Silvana Nardone.  It is a gluten free dairy free cookbook that a mother wrote for her son.  I was excited to peruse and try some of the recipes in this book but when I opened it up I found that it wasn't really usable for me.  While I do eat gluten free, I don't eat gluten free products.  For example, I would rather go without a hamburger bun than eat a gluten free hamburger bun.

I found one or two recipes to try but only actually made one of them: creamy dairy free pesto.  Here is a link to it on her website.  I used walnuts when I made it and they did make it creamy.  I made my classic stuffed pepper pizza and used the pesto as sauce.  It was tasty.  The babies got it on toast with cheese melted on top and actually ate it (I forgot to take a picture of it.  I'm sure you can imagine it).  I would make half a recipe instead of a full one.  I put half of it in the freezer and it's still in there!
