I love pizza. I love pizza. I really love pizza. And with my current diet, pizza is hard to come by. I can't have grains, so regular crust is out. I can't have gluten free crusts so that's out too. What's left??? Meat and vegetables. If you read my post about Chicago, then you know that one can make meat into a crust and it is delicious. Well, I wanted to try something less intensive so I went on an Internet search and found these: pepperoni pizza stuffed peppers. In reality, I didn't exactly follow the recipe, but I used her idea to create my own pizza creation.
I started with one red bell pepper. I cut it in half, seeded it and baked it for 20 minutes. While my pepper was baking, I made my own homemade sauce and grated up some mozzarella cheese and cut my pepperoni into quarters. I did not measure anything when I stuffed my peppers...I just stuffed them full.
Before baking: I layered some cheese, then some sauce, then pepperoni, then cheese. I did sprinkle them with Italian seasoning because I had some, but I didn't use any parmesan cheese because I was being lazy and didn't feel like grating any more cheese.
And after baking:
These tasted so good. I ate them with a fork and knife and managed to be pretty neat about it and get some of everything in every bite. I loved the sauce and cheese and pepperoni, though next time I will probably try sausage instead. It really did taste just like pizza and I'm glad I found an alternative that I can enjoy and isn't too labor intensive. I was pleased to eat something delicious today since a lot of times I eat the "same old, same old." Food can be delicious no matter what diet you are on!
