I was wondering what I was going to cook for dinner and was going through my options in the freezer and landed on some salmon. But I didn't want to bake it or broil it (broiling is hard with my three kiddos running around). So I googled pan fried salmon recipes and found this enticing recipe for skillet seared salmon with garlic lemon butter sauce. I had most of the ingredients and could easily substitute for the other one or two. I don't usually eat butter since dairy and I don't get along but since it was cooked, I knew I'd be okay. Unfortunately there are no pictures to document the delicious results but delicious it most certainly was.
I used what salmon I had and seasoned it with pepper and garlic powder. I used only 2 tbsp + 1 tsp butter and that was certainly sufficient. I substituted water for chicken broth and didn't bother using the honey or salt at all (the butter was salted though-does that count?). I pretty much followed the recipe exactly until the end. After the salmon was pretty well cooked I put most of the butter sauce into the pan with the salmon and let that simmer a for a few minutes. When serving I poured the rest of the butter sauce on the fish. Yum! It was a yummy treat and took hardly any extra time.
Oh perfect. We're having salmon tomorrow, and I haven't decided how to fix it. Thanks!
