Well now that we have church that ends at 4:00p all year I really have to up my dinner game to get it done and on the table by 5:15p. That means more crock pot meals. I have about two meals in my crock pot repertoire so I find myself scrambling for new recipes regularly. Last week I found this recipe for slow cooker bacon and chicken. I had some leftover bacon in the freezer from our St. Patrick's day meal and decided to use that. So I used 5 chicken breasts and 6 slices of bacon. I put in 2 tbsp olive oil and 1/2 cup water and didn't need the 3 tbsp olive oil at the end of cooking. I also added 1/2 tsp pepper and ditched the salt.
One of the best things about this recipe is that I put the raw chicken and raw bacon in entirely frozen! It cooked up great in about 7 hours (1 hour on high and 6 on low). It was actually quite delicious and different from our normal meals. My husband liked it with bbq sauce so it might be a good sub for pulled pork sandwiches. Try it!
ps. A few weeks ago I tried this recipe for enchilada chicken stew and it was pretty good. I followed the recipe mostly except I only put in about 1/4 of the jalapeno can and used olive oil instead of coconut oil. It was still pretty spicy. I didn't take a good picture of it so it doesn't get it's own blog post.
