We had a pretty rough winter and some friends brought meals to us. One dinner was enchiladas with green sauce. I thought it was pretty delicious but there was a little too much corn tortilla. She sent me the recipe and I went to search for a homemade recipe for green chile enchilada sauce. I found this recipe and tried it out. The "filling" is just 1 lb shredded chicken, 1 bunch green onions, 1/2 onion (the other half is in the sauce) and 1 1/2 cups pepper jack cheese. To make it a casserole instead of enchiladas I lay tortillas down on the bottom of the pan as a crust and then put the filling on top and pour the sauce on top of that. Top with a bit of cheese and some decorative tortillas and bake at 375 for 30 minutes or so. This was sooo delicious. I loved it!
