Here Comes Father's Day

Last week I asked my dad what he wanted for Father's day and he immediately said, "Nothing."  How appropriately difficult.  So I started to brainstorm and all I could come up with was to make something good and yummy for him to eat.  So my mom and I asked him what he wanted to eat for dinner and dessert and we got much, much farther.  He was totally willing to tell us what he wanted.  So today I made the Vanilla Pudding Dessert, a dessert we have eaten in the past but that has no recipe.  It is no-bake which is great if you live in the desert and don't want to heat up the house.  Here it is:




And here is a made-up recipe for this lovely Vanilla Pudding Dessert:

Crush graham crackers in a bag; use about two packages.  It is easiest to put the crackers in a bag and crush them with a rolling pin.  These crushed graham crackers will be used for the crust and also for the topping.  Melt one stick of butter in the bottom of your 9 x 13 pan.  Pour in some graham crackers crumbs.  This is very much a guess-and-check method.  Mix the butter and the graham crackers together and pat them down to make a crust.  Make sure you leave some crumbs for the topping.  Then make a large box of instant vanilla pudding (or two small boxes).  Add in one package of softened cream cheese and mix well.  Then pour the pudding mixture on the crust.  Sprinkle your leftover crumbs on the top and pat down into the pudding.  Cover it and put it in the fridge and enjoy whenever you want to.  Just remember that graham crackers usually have partially hydrogenated oils in them, but for my dad, I'd do almost anything.
