Do they look like the picture? Her frosting is a little thicker, but otherwise, I think it's a good likeness.
Here's the process. These are Butterscotch Icebox Cookies. Icebox cookies are a type of cookie and they are always made in advance and require time in the icebox (aka refrigerator). The result is similar to Pilsbury roll cookies, where you just separate and put on a cookie sheet (these Pilsbury are the bane of any "stereotypical" housewife of course). In my case, you make the dough, roll it into a log, wrap it in plastic wrap, and put it in the fridge for an hour (or longer-you can freeze the dough and pull it out when you need it). My log got a little long so next time I'm going to make two smaller logs. The recipe said the cookies don't spread much, but I found they spread a lot and made huge cookies (for me I think they are gargantuan). I also think I will throw the butterscotch chips into the food processor with the butterscotch candies next time.
So I cut them up, baked them and marked them with a "K." Okay, not really.
Here is the topping. It is just melted chocolate chips, white, butterscotch, and chocolate. You can see the "pastry" bag I used was quite up-to-date (we all know that housewives look for ease in life and this was very, very easy).
The cookies were so good plain so they must be double or triple good with all the chocolate on top. I can't wait to try one (I have to let the chocolate cool).
If you ever find you have too many cookies and need to get rid of some, I can help you out there!
