Iced and Spiced Pumpkin Cookies

You guessed it; I made cookies again.  Some of you may be asking when she will ever stop but I assure you that come December, the cookies will not be so plentiful.  In any case, I made these pumpkin cookies for the squadron Halloween party and luckily I made enough to share with my co-workers too.  This is the first recipe I've used from a new cookbook that I got for my birthday.  They were a hit.  One consumer sat down near me, not knowing I made them, and told his wife, "These are ridiculous!  Do you know who made them?"  Not soon after, I raised my hand to claim accolades and confirm that I would share the recipe with them.  I also enjoyed them, eating many more than usual-a total of six so far.  Since I make cookies so often I don't eat more than one to three cookies from each batch, so it must be a good cookie when I eat double the normal amount.  I think it was the cream cheese frosting=yummy to my tummy.

Here are the pumpkin chocolate chip cookies with walnuts.  I preferred the cookies with walnuts but most consumers went for the cookies without.  No worries, the cookies are actually the same color-that's my camera's interpretation of color.

And the best part is that I still have some in the freezer (and some frosting in the fridge) which I will take to work on Monday to enjoy one more time before I make something new.

  2. Ohhh...those look delish!!! If I knew these were there I probably would've had 6 too! I steered clear of the food table!
