Way, way back in another century, I went to college. While there, I acquired this recipe from one of my many roommates; the exact roommate is lost to history since I don't remember the source of these bars. These peanut butter bars are delicious and they are the favorite of at least one of my co-workers. Practically the only time I make them is when I know I am going to see her; in fact I made them for her birthday once.
In any case, I just saw her not two weeks ago and whipped these up just for her. I used natural peanut butter, so no added preservatives or sugar in the peanut butter. There was plenty of sugar in the bars themselves; I don't get that carried away in my pursuit of healthy treats. The frosting is also a peanut butter frosting but is disguised as chocolate. I forget how addictively good these bars are. I threw some sugar crystals on top to hide any blemishes in the frosting. Despite how the picture appears, the frosting layer is not as thick as the bars, but it's close.
