Carrot Cake Oatmeal

Healthy eating is a very important part of the life of a stereotypical Mormon housewife.  I am always looking for new, healthy ways to enjoy my old favorites as dessert.  You may think that dessert is not a part of healthy eating, but let's not forget what healthy eating means.  Sometimes, for your emotional health, you just need dessert.  It is a natural desire and quite justifiable.  Well, for one who has sworn off dessert for the forseeable future and loves carrot cake, this was a great find.  Here is my grated carrot.  Very orange.


Here is the link directly to the recipe. I followed it exactly except I only used 1 tablespoon of maple syrup and no coconut or coconut milk creme.  Here it is in the pan.


Here is the finished product with walnuts and cinnamon sprinkled on top.  It looks like it is one serving but it was two servings for me.  I refridgerated the second half and ate it the next morning and it was still delicious.  Not exactly carrot cake, but it has lots of good ingredients and was a great way to dress-up regular rolled oats.
