Recently, I changed my diet and have received some success in reaching my goals (yay!). For a few days or so, my sister-in-law has been urging me to get out my crock-pot to make larger meals that I can use for lunches everyday (lunches are the most difficult for me). I finally caved to her (and others) insistence. I got out the only crock-pot recipe that I had and knew I liked: Southern pulled pork. I made a list, I went grocery shopping, I promptly came home and started on the recipe.
First I made the cajun seasoning for the meat.
Then I browned the seasoned meat. For your convenience, you should always ask the butcher at the grocery store to chop up your meat for you. I bought this as a six pound hunk and they chopped it into six different pieces for me. Very nice.
After cooking in the crock-pot for six hours this is what it looks like.
Then you take out the pieces and shred them. This was more difficult than I thought because the meat was so tender and fell right off the forks and back into the broth. It was very exciting.

And here are my leftovers. Four individually sized containers for the freezer and two larger containers for the next week. Should be a pork-filled week but I certainly shouldn't be wanting for leftovers. Now if only I had a garage where I could cook with my crock-pot so my kitchen doesn't get all hot. Maybe in our next place, wherever and whenever that may be.
