Strawberry Freezer Jam

It's that time of year again (okay maybe it was that time of year again a month ago when I actually made this jam)!  Scour the ads to find the last good sales of the season for strawberries and attack!  Then promptly make those strawberries into jam before they go moldy-oldy in your refrigerator.  This year, I made one batch of totally sugar free jam.  I buy no-sugar-added pectin, cut up the strawberries, throw in the pectin and you are done, done, done.  For those who don't know, the sugar in freezer jam reacts with the pectin to make a thicker consistency.  So my no-sugar jam is a little on the oozy side, but it still tastes delicious.  You really don't need to add all that sugar (at least I don't need to add all that sugar).

I also made one batch with some agave nectar because I was going to give some away.  A friend of mine, who will remain unnamed, just turned 40 and had never, ever had freezer jam in her entire life.  Well, I just had to stop that streak by letting her enjoy the wonder of strawberry freezer jam.  What kind of friend would I be if I didn't?  I believe she enjoyed it (her comments about it seemed to indicate that). 

Here are your ingredients.


Mash, mash, mash with your potato masher.


Freeze, freeze, freeze in your freezer.  Don't forget to label for different flavors/sugar amounts.


For my first taste of my freezer jam I made lumberjack pancakes, a recipe from my mother-in-law that I had never tried before.  It is a whole lot of whole wheat flour with just as much oatmeal.  What could be better, I ask you?  Nothing.  And because I like pancakes in the shape of waffles, I always make waffles!  Yum.  Throw some strawberry freezer jam on top and who needs syrup?  Not me!

  1. I will have to try that next that next strawberry season. I need something to sweeten them, but I will try stevia. :-}

  2. Ugh, stick with the nectar mom. Sounds good Kathleen. Too bad I'm stuck in desert wasteland and can't make some too.
