I was looking in my cookbooks trying to find something that looked easy but super good and I found this lemon bread recipe. All I needed was a lemon and that was easy to procure. The hardest part about this recipe was zesting the lemon. I used my juicer to juice it and that was super easy since it is electric (and it's the best juicer ever!). The fun part of the recipe was poking holes in the cake and pouring the glaze all over it.
I found that a very important part of the process for this cake was to grease and flour the pan. Even with all this work, I lost a little bit of the bottom of the cake when I took it out of the pan. I will be more vigilant next time.
Here is the finished cake. If you look closely you can see the picture in the cookbook. I was
very pleased that my cake looked nearly the same as theirs.
Out of the pan. I thought it looked a little crispy but it turned out well. My first taste tester said that it was very good.
So I cut it up and took it to work. All of my coworkers said it was good. They also said it was nice and lemony which is always the trick with lemon baked goods; finding the balance between the lemon and the sugar. Also in this picture you can see what I used as a skewer, my meat thermometer. I poked holes in the cake with it for the lemon syrup to infiltrate. It looked so good and smelled pretty good too. Yum!
Lemony desserts are by far my fav over chocolate (I know I'm weird)
