About a month ago I was craving pumpkin baked goods. I had to get my hands on some or else! The problem was that I stopped eating sugar and white flour and had no recipes for a pumpkin baked good. So I went to work, searching on the Internet for the perfect recipe (I am a librarian you know; I get paid to look stuff up on the Internet). This is the recipe that I found. I still had to adapt it because I am not eating sugar substitutes either.
Mix the dry and then the wet. This is what you get. The one substitution I did was for the stevia, not that stevia is terrible or anything. I just wanted to use a naturally occurring sugar (stevia may be naturally occurring; that's neither here nor there since I didn't want to buy any). So I used 1/16 cup of maple syrup and 1/16 cup of honey. I was really just playing here-no rhyme or reason to it. I knew that I wanted less than 1/4 cup of sugar so I succeeded there.
Once I made the batter I decided I wanted a topping as well. I used pecans, oatmeal, butter, cinnamon, nutmeg and agave nectar. I made this "recipe" up. There were no measuring spoons involved. If I were to try to duplicate it, it probably wouldn't be exactly the same.
Here they are after baking. I did not make them jumbo size but they are still delicious. I made almost two dozen. It turned out they were too good for my own good so I quickly contacted my go-to people so I could give some away. So I got to spread the healthy pumpkin muffin cheer and keep about a dozen for me. I still have some in the freezer and they are still super good: just as moist as when I made them.
I should try it. All the recipes I use for muffins have a TON of sugar in them.
