Broccoli Salad

Hello, my fans!  I am finally updating my blog again.  I'm sure I will "finally be updating my blog" many times before the semester is over in May.

I have always loved broccoli salad.  You know, the kind with raw broccoli, sunflower seeds, red onions, bacon and dressing.  I absolutely gravitate toward it at all times.  However, I have always known that the dressing is made of mayonnaise and that just sounds gross.  I know, weird.  The other day I was searching the Internet and found a recipe for dressing that was not made of mayonnaise.  It was made from Greek yogurt!  That sounded like my kind of dressing.  So I tried it out last week and it was pretty good.

For about 4 cups of chopped broccoli (and other ingredients) use 1/4 cup Greek nonfat plain yogurt, 2 tbsp balsamic vinaigrette, and season to taste with salt and pepper.  Yum.
