Seriously, these are the best lemon cookies I have ever made in my entire life. I was looking through my cookbook to find something that caught my eye and this combination of lemon, white chocolate, and walnuts did the trick. I'm sure you all know the problems of baking with lemon. A little known fact says that most recipes for lemony things will add so much sugar as to destroy any and all of the natural lemon flavor, thereby producing a thing that tastes like sugar but has lemon in it. These cookies are an exception. I used one entire lemon to produce these. The recipe calls for juice and for zest. Yum. The cookies themselves were really good, but I had a whole bunch of juice leftover and I just had to use it.
So I made a very simple glaze of powdered sugar and freshly squeezed lemon juice and squirted it on using a trusty snack bag and cutting off the corner. Double yum. For anyone who likes lemon baked goods, these are awesome!
