So when I got home from my summer vacation I decided to buy some flax seed. I was looking into some healthy options to beef up my oatmeal and that was high on the list. It contains a lot of fiber, which we all know helps you to stay feeling full for longer after a meal. I have started putting it into casseroles, pizza dough, oatmeal, and anything else I can mix it into. One day, while in front of the open fridge, I was perusing the flax seed package and found there was a recipe on it that looked rather interesting and relatively healthy. First, always energy conscious, I closed the refrigerator door. Next, I perused the recipe itself. Last, I decided to make said recipe.
Here is the dough before adding the liquid ingredients.
Here are the muffins before baking.
And after baking.
And here is one opened up almost directly from the oven. Can you see the rising steam?
They don't look like much, but they are super yummy. They have brown sugar in them as a sweetener, so they are sweetish (not Swedish-sheesh). But they also have flax seed, oat bran, apples, carrots, and walnuts. And they are very moist. People at work said they liked them. I cautioned them not to eat too many despite how good they tasted-they do have bran after all!
They do sound good-I bet your dad would like them.
