Homemade Apple Compote

I recently finished my American Sign Language class and now I am excited to finally to some things I have wanted to do for the past month or so, like make homemade apple compote.  In April I went to Millie's, one of the my favorite breakfast places here.  I got their Belgian waffle with apple compote on it and it was delicious.  I decided that I had to figure out how to make it myself.  It has to be easy, right?  Well, it was actually.

I skinned and cored my apples; one a Granny Smith and the other Fuji.  I added 1/2 tbsp butter and let that simmer about 30 minutes on med low heat.  I also squirted some honey in there but it was very little.  After 30 minutes, add a sprinkling of cinnamon and nutmeg and let it simmer until you think it is done.  Basically, until it's the consistency that you want.

Here's the finished product.  The Fuji apple because like applesauce and the Granny Smith held it's form.  Yummy.

Here it is on my oatmeal waffle.  Yep, I used oat flour and wheat flour and threw in some oatmeal too.  I only wish I had had nuts to throw in as well.  Two apples makes enough compote for about two waffles (for me anyway-you might want more or less than that).
