A Delicious Salmon Filet

I have been craving salmon lately and last Saturday I got some at a restaurant and it was delicious.  Did it satisfy my craving?  Apparently not since I bought a 1/2 pound filet today from Sprouts.  I go to Sprouts every Wednesday for my grocery needs.  Mostly I buy things that I eat.  I buy things for my husband at the regular grocery store.  So it cost me about $5.50 which is a little expensive for me for lunch but I wanted that salmon. 

I wasn't sure how to prepare it so I started googling recipes hoping to find some that included ingredients I already had.  I mixed and matched some of the recipes and this is what I came up with:


I brushed it with olive oil, then added kosher salt, pepper, one clove of crushed/minced garlic, dried basil, feta cheese, and the fresh juice of nearly one whole lemon.  I did not measure any of this stuff so don't ask.  I baked it at 350 for 23 minutes (or so) and it was delicious.  I think this might be my new Wednesday lunch: easy, healthy, fresh, and delicious.  I inhaled the whole piece in about seven minutes.

  1. We miss salmon and have been told we are fish snobs because we don't care for the bottom feeder fish they eat around here. Your lunch looks amazing!
