I am all for trying out new savory baked goods. These have become my special treat; they are so good but often contain vegetables, which are so good for me. So I was excited to try these summer squash pancakes from a book I got from the library. I started by grating my zucchini and squash...grating things is so much fun, right?
Then I smashed all the other ingredients together, which included things like onions, salt, pepper, dill, flour, baking powder, eggs, etc. This is what the batter/dough looked like when I had added all the ingredients. To me it did not look like pancake batter; it was more the consistency of muffin batter. Despite this, I forged ahead and made the pancakes (well, waffles since I like waffles better).
Here's what one of my waffles looked like. It looked kind of like a hash brown (even though there was no potato in it). I took my first taste and...it was terrible. Who came up with this recipe? What were they thinking? Why does the batter look like dough? Blech. Well, I took the first batch out and added a second to the iron. While that was cooking I was ruminating. 'Will I eat these? Are they good enough to want to eat? I think I will throw the rest of the batter away. I just threw the batter away and all the waffles so why am I still cooking the waffles in the iron?' At this point I threw in the towel, turned off the iron and tossed all the waffles in the trash. Good riddance.
I will add that I think something was missing from the recipe, like something liquidy. But since I didn't like how they tasted I was pretty sure it wasn't worth messing with the recipe to get a better product. So that's one epic failure which I blame on the cook who invented the recipe (of course). My husband had this to say, "I guess you can't add zucchini to everything."
