Double, Triple, Quadruple Almond Muffins

So I recently changed my diet from a diabetic diet (I could eat fruit and whole grain carbs) to a ketogenic diet (no more fruit or whole grain carbs).  I have really been wanting some baked goods of some kind: waffles, muffins, something!  I looked up recipes online but wasn't satisfied with anything, so I decided to just make something up based on my oatmeal muffin recipe (no more oatmeal either-boohoo).  Here they are.

My base was 2 cups of almond meal.  Then I added all sorts of seeds: flaxseeds, flaxseed meal, chia seeds, and sunflower seeds.  I also threw in some almonds (double) because I had them.  I did not measure these amounts.  I threw in some salt and baking powder (this is the no-no since it has corn starch in it; I'm not sure I care that much). 


After mixing up the dry ingredients I added two eggs and some olive oil.  Then added one cup of almond milk (triple).  And since I was making almond muffins I decided to go all out and add some almond extract (quadruple!) and some vanilla.  At this point I wasn't sure if they would come out.  Almond things tend to be very soft and fall apart easily.  I put them in the oven...


And they looked great when they came out!  Yay!


An opened muffin: you can see all the seeds and goodness in there.  These were so good and almondy.  Now I have an excuse to eat butter again!  Yum!
