Paleo Meatball Subs

I love meatball sandwiches...except I really don't.  I started ordering them because my husband really likes pizza places and I couldn't eat the crust anymore, so I opted for the meatball sub.  I grew to really enjoy them with one little twist of course, no bun! or no bread! or however the restaurant did it: no starch!  Well, all the restaurants I've been to have been very kind to me: they just bake the meatballs and sauce with the cheese until melted and serve.  It is delicious.  I figured it was about time I attempted to make one on my own. 

Even though I am not eating a paleo diet, I find it is closest to the diet I am following and therefore I don't have to change the recipe much.  I found a recipe for paleo meatball subs and got started.  I didn't bother with the cauliflower bun.  Otherwise I followed the recipe almost exactly.

I decided to make two servings from the pound of meat I had.  So I made five large meatballs each.  Here they are uncooked.

I have my own stellar recipe for spaghetti sauce but the whole purpose of trying new things is to try new things, so I made her recipe, which turned out good.  I assembled them by putting five meatballs in each container along with sauce, evenly divided, and the cheese, which is mostly mozzarella with some parmesan.  I cooked some noodles for my husband's bowl which is why his is larger.  


Then I baked them in the oven for about 20 minutes.  Melting ooey gooey goodness.  


What it looks like from the side.  Yum!  These were too big for one serving but we managed to eat them in two days.  My husband says his was a little dry, probably because we both got the same amount of sauce but he had noodles in his.  I didn't like the big chunks of onion.  I did saute them so they would be softer but they were still too crunchy for my liking.  Next time I might just use onion powder.  The onion in the sauce was okay though.  I think I'll make them again but might tweak the recipe more to my liking.
