Zucchini Pizza Boats

Well, I was on a pizza kick this week, what can I say?  My sister-in-law sent me a link to these pizza boats (after she had seen my previous post) and I just had to try them. I had all the ingredients already and that hardly ever happens when you are trying a new recipe.

I cut my zucchini in half, brushed on some olive oil and sprinkled them with salt, pepper and garlic powder (I was too lazy to mince a garlic clove for this).  


Then you just spread the sauce, cheese, and toppings like a normal pizza.  


After baking.  I did have a little trouble with the toppings sliding off so I would recommend slicing the bottom of the zucchini so it lies more flat on the pan.  I might also scoop out the seeds next time to make more room for toppings.  I liked these but I also liked the stuffed peppers.  Good thing I don't have to choose between the two.

  1. I'm happy you enjoyed them! We still haven't tried them since Anda went to Virginia this week there wasn't really a point to make them for just myself!
