Cookies!

My husband's job requires him and his co-workers to occasionally test their physical fitness.  It hasn't been going so well, but I still make cookies for him to take to work.  The last time, his boss jokingly commented that I need to stop sharing all my cookies!  Enter the Carrot Sunflower Cookie.  Bum, bum, bum!  The Carrot Sunflower cookie is trying very hard to be a healthy cookie.  It has carrots, sunflower seeds, walnuts, honey; too bad it also has brown sugar and butter.  In any case, we'll see if anyone dares to eat them.  They may not look too appealing, but they are soft and moist and full of spice.  I really like them, but sadly, I cannot convince myself that they are, in fact, a healthy cookie.  Are there really any healthy cookies?



*Note: I love the recipes in this book, but she either makes super big cookies or has no idea how much her recipes actually make.  This recipe said it made about 30 cookies and mine made 60.  Who needs a cookie that big?

  1. While not healthy, they might be considered more healthy than the average cookie because of the added nutrients, fiber, and protein.

    I started making muffins instead of cookies because, 1. a normal recipe make less than a cookie recipe, and I have a small family and 2. I thought they might be healthier than cookies. I've decided that I've probably just been fooling myself about them being healthier, other than the fruit that many of them have.
