Beef Tips à la Kat

I was thinking about what I was going to make for dinner last night and knew that all I had were some beef tips in the freezer.  Usually I just fry them on the stove top but I didn't feel like doing that.  We had just had something similar and I wanted something different, so I made something up.  I seasoned the meat with my own seasoning that I made up using: salt, pepper, red pepper, garlic salt, ginger, paprika, powdered mustard, and cajun seasoning...it was really just a free-for-all of all my seasonings.  I browned the tips and then let them simmer with some onions for about an hour.  I had a momentary crisis when I discovered I didn't have any bouillon or beef broth...I decided to just use water.  I discovered that water is good enough.  Who needs beef bouillon?  After an hour, I checked the temperature to make sure they were cooked all the way through, then added the bell peppers I had in the freezer from two weeks ago.  Simmer a little.  I thickened the broth up but not too much...it was still soupy.  Pour over rice and look what you get!  A yummy dinner.  


I felt very proud of myself for being able to just make something up like this and that it worked out.  Maybe I'll be more adventurous in the kitchen in the future.

For this same dinner I also made oatmeal muffins, but I used olive oil instead of canola oil and I used agave nectar instead of sugar and added some flaxseed meal.  They still tasted like oatmeal muffins and were hopefully just a little bit healthier than normal.

  1. I'm afraid of experimenting because if it fails then I wasted all that food and I have nothing to eat. I think I need to learn about spices and how to use them. I'm glad it all worked out for you.
