Simple Chocolate Truffles?

I printed this recipe out from the Internet about 9 months ago.  I read it and it looked like it would, indeed, be simple.  However, two batches and two days later I am here to tell you that these are not as simple as one would suppose.  I decided to halve the recipe for what I wanted to do with them.  I started with some white chocolate because I had it and wanted to use it and I like vanilla truffles.  I also made semi-sweet chocolate today so the pictures may reflect both flavors.

First you chop the chocolate which is no fun at all: it's actually pretty easy but your chocolate pieces fly everywhere.  Then you process it in your food processor.  Unfortunately, my food processor attachment on my Bosch ended up being a food slicer and dicer so I had to use my mini-food processor which means I had to make three batches of truffles.


So you actually roll the truffles in cocoa which I think kind of seals it all together but who really knows?  All I know is that when I finally dipped it in the chocolate it melted the cocoa away.  Is this step really necessary?  I have no idea but you can take a look at the mess it made.  In fact, the whole thing was a mess-chocolate everywhere!  Yes, my other hand looked the same.  You can't imagine how many times I had to wash my hands.  Ugh. 



Then you have to melt the chocolate that you will dipping these cocoa balls into.  That was the easy part.


It was the actual dipping that was the most difficult.  After you dip you are supposed to coat them in cocoa again to seal them (this is because I didn't temper the chocolate-whatever that is I'm sure it's more complicated than this and this was complicated enough).  However, since the chocolate is hot, the cocoa just melts away and you are left with a mottled cocoa/chocolate effect.  You can even see the white seeping through.   


Here are my chocolate ones, which turned out better because I did some additional research on truffle making.  Not that they look that great though.


Now, after the crazy adventure of making these little truffles you are probably wondering if they were worth the effort. To me, this filling looks delicious and creamy and guess what!  It is delicious and creamy.  These truffles are melt in your mouth good; both the white chocolate and the regular chocolate.  Now ask me if I will ever make them again.  Well, I did keep the recipe but I am more likely to go buy some Lindt truffles or See's Candy instead.

  1. Sounds like too much work and mess to me too. That's why I used molds and filling instead. :-}
