Some of you may or may not know that I gave up eating recreational cheese awhile ago. The only cheese I didn't give up was pizza cheese...or mozzarella as people know it. Since I desperately need pizza, it's not really a recreational food item, is it. Well, every so often I buy tortillas to make fajitas but we never use up all the tortillas. So one day I was searching for a recipe online that would help me use up my leftover tortillas because quesadillas just weren't going to cut it anymore. I was imagining some kind of casserole with tortilla layers that I had probably seen at some church potluck or something. I found a few recipes that fit the bill, but in reality, I just threw some ingredients together to make this casserole.
Here are the ingredients: tomatoes, pinto beans, black beans, salsa, tortillas and hamburger
Here's the filling. I mash up the pinto beans as best I can to make a sort of paste then dump everything else in. I did add a few seasonings to make it spicier but you don't have to add anything really. It's not as good without the meat but you can make it vegetarian if you like. The fresh tomatoes make it taste more fresh and less out of a can.
Then you just layer it with your leftover tortillas, or maybe you don't have any leftover tortillas. I think I baked it at 350 for 30 minutes. It's all cooked so it just has to be heated up again.
So my husband asks me over dinner, "what is this?" and I say, "I don't know, Kat made it up." To which he said, "We could call it..." To which I interrupted, "I made it up; I get to name it...tortilla casserole." I mean really, what else could it be called. I think I'll still call it Kat Made it Up though.
I think "Kat made it up" is a perfect name for it.
