Bacon Bruschetta Stuffed Chicken Breasts

I bet you are all wondering what I've been up to right?  Am I right or am I right (or am I right)?  Okay, well I haven't been doing too much but I have been busy.  Does anyone know how that works because it doesn't make a lot of sense to me.  Here's one thing I did this week: I made a new crock pot recipe.  About 2 weeks ago I got a paleo crock-pot recipe book from the library and decided to try a few.  The first was Bacon Bruschetta Stuffed Chicken Breasts from this book:

And for those of you who are just begging for the recipe, I took a picture of it for you.  Is this copyright infringement?  Probably, but I'm willing to make an exception for recipes since so many of them are shared by word of mouth.

I followed the recipe pretty much exactly except I salt and peppered the chicken before I put it in the crock pot.  I used about 2.87 pounds of chicken breast (according to the packaging).  I ended up cutting the three breasts approximately in half and then butterflying the meat.  That was the first time I have butterflied chicken and it went very smoothly and was super easy with my sharp knife.

Here is my bacon, tomato and basil mixture.  I did roughly chop the basil even though the recipe doesn't say to do so.  I didn't think it would be enough but it turned out well in my opinion.

Here they are stuffed and shut with toothpicks and ready for cooking.

Now I had some errands to do the day I made these so I left.  The recipe said I could cook them for 6-8 hours on low.  Let me tell you that you should err on the side of 6 hours.  Mine were in for 7 1/2 hours and were very, very dry.  I think that if I had been home and not out running errands it wouldn't have been a problem and they wouldn't have been overcooked.  Even though they were overcooked they were still good.  My husband said, with his stellar way of complimenting, "if you made them again I would eat them."  Whoohoo!  It's definitely going into the recipe book after that.  Afterall, anything is good with bacon, right?
