My mom, who is on a paleo diet, really likes a certain website called Savory Lotus that focuses on using real food in your cooking. I looked at her list of recipes and, to be honest, wasn't stimulated by them. There was one though, that I thought I would try called Kale and Sausage and she bills it as a 15 minute meal. I made it tonight and it took me about 30 minutes from when I started washing the kale to the dinner being on the table. Still, I'm always looking for a good 30 minute meal.
First I washed and "boned" and cut the kale. I cut it into strips and didn't worry about how big they were since it was going to be steamed. At this point I was a little concerned about it all fitting into my pan since it was clearly overflowing and this is my largest saucepan.
I took a leap of faith and smashed the lid on and turned it on.
Magically, when it was finished steaming it had cooked down so no worries on overflow.
Simultaneously, I cut the sausage up. I used Cajun Style Pork Andouille sausage. I did not need to use a teaspoon of butter for sauteing it.
The finished product all together. I used a mixture of soy sauce and olive oil instead of coconut aminos. I ate leftover broccoli as well since I knew that a little kale and sausage wouldn't be enough food for me. If I still had a carb serving then I probably would make some bread item to go with this. When my husband saw it, the first thing he said was, "It looks like spinach." I assured him it was kale. Apparently, his mom used to make frozen spinach in some way that he didn't like. He described it as 'squishy.' Well, I wouldn't like steamed frozen spinach either (if that's what it was). I assured him multiple times and even described what real spinach looks like. He tasted it and he went for seconds. Yay! So now I have found a non-carb alternative to sausage and couscous, a dish that we enjoy regularly. Bye, bye couscous, hello healthy kale!
Looks delicious! I'm laughing at the response from the husband. Spinach can be a little difficult sometimes, I agree. Did adding the broccoli help you feel full? Somehow I don't think of broccoli as being super-filling... xoxo
