Savory Whole Grain Zucchini Cheddar Muffins

For the past year or so, since I started my new diet, I have been looking for ways to eat vegetables at breakfast.  I know the sure-fire way is to have green smoothies, but I had green smoothies for about six months and got sick and tired of them so I have moved on to muffins.  There are a lot of savory muffin recipes out there and here's a great one.

Here are my ingredients halfway through and haphazardly placed.  You see my grated cheddar, my grated zucchini (I used one zucchini and it was a little less than a cup as you can see), my flour mix (I used regular whole wheat flour), and my egg, milk, and butter mix.  All that is missing is the green onion that I still needed to cut up.  Put them all together and what do you get?  


This very appealing dough!  It is not very liquid-y like other muffins, but I don't like to change the recipe too much so I went full speed ahead and filled the muffin tin. 


And it was very full!


Apparently I did not take a picture of them when they came out of the oven and they are in the freezer now so, tough luck.  Let me assure you, they are delicious and they puff out to make perfect muffin tops.  The cheddar, the zucchini, and the green onion all mix into one savory muffin of wonder.  I did find that it was best with butter on top instead of plain but I do like my butter.

  1. Those look delish! I've been looking for something new and healthy for us to east, but if I can't hide that zucchini somehow it's a no go for your big bro 😒
