Around five o'clock in the evening I was contemplating what I would have for dinner. I wasn't making anything for my husband, who was busy with a college class. I had already eaten all of my fruit servings for the day and all of my carb servings; that basically left protein and vegetables. My first thought was to scramble some eggs (the go-to meal) and eat some vegetables. Then, I opened my freezer! What a treasure trove it turned out to be. I saw that I had some ground chicken sausage (I cooked this on Wednesday and froze it for future pizza toppings), celery, red and green cut up peppers and tons of nuts. Well, as you can imagine, I chose a few of these and thought, 'I'll scramble some eggs and throw some of this stuff inside.' Then I thought, 'maybe I should finally learn how to make an omelet instead.'
One google search (I found this article) and about five minutes later I was ready. I defrosted my goodies for the inside (no, I did not use any nuts or celery but I did use the sausage and peppers) and whipped up my eggs in a separate bowl. I threw some butter into my fabulous non-stick pan and waited. I threw in my whipped eggs and let them settle. Basically, I followed the instructions from the article exactly. Unfortunately, I did not take pictures of the process since I was busy wondering whether (1) I was doing it right, (2) it would actually come out as planned, and (3) I would actually enjoy eating it. Luckily, all three came to pass. Here it is ladies and gentlemen, my first ever two-egg omelet. It may look a little crispy, but it didn't taste crispy. In fact, it was great. I don't know why it's taken this long for me to try this out.
Here are the yummy insides. I also added some mozzarella cheese that I had lying around in the refrigerator. Yum yum. And now I am just thinking of all the fabulous possibilities this opens up for me for quick dinners (and breakfasts).
