Pecan Crusted Chicken

I just happened to look up recipes for pecan crusted chicken but found that they all involved bread crumbs.  And we all know how I feel about bread crumbs.  Then I added the magic words to my search terms: gluten free.  Ahh, here was more success.  Some recipes still called for special flours and such but I found a great recipe that was just pecans and spices.  I would link to it for you but it took at least 15 minutes for the website to load yesterday, so I just wrote down the recipe.  Here it is:

3 pounds chicken breast
1 tbsp onion powder
2 tsp Italian seasoning
1 tbsp garlic powder
1 tsp paprika
1 cup pecans

Mix all ingredients except chicken in a food processor so that the pecans are crumbly.   Coat the chicken (I used chicken tenders) in the pecan mixture.  Place in greased 13 X 9 pan and bake at 375 for 45 minutes or until done.

There you have it.  A very easy peasy chicken recipe.  Here's my chicken and my crumb mixture.   I did add a pinch of salt and pepper to the mixture. 


Here are the finished tenders.  We ate them with utensils though they may be consumed with fingers.  My husband enjoyed some BBQ sauce with his.  I enjoyed mine plain.  


Here's my delicious dinner.  I was quite pleased with the results but I think next time I might try Cajun pecan crusted chicken.  We like spicy in our house and this recipe could be adapted to any type of spicy flavor you can come up with.
