Spicy Sausage, Chicken, and Summer Squash Slop

I was looking around for paleo crock pot recipes and found this one that looked appealing; though the name left something to be desired: spicy sausage, chicken and summer squash slop.  I am thinking of renaming it but I won't go to the effort unless I make it again.  If I do rename it, it will definitely be known as firehouse surprise.  Don't forget the chocolate chip pear muffins too!  Anyway.

I wanted something easy, as in "throw everything in the crockpot and leave it for eight hours."  It didn't turn out that way.  I used ground sausage so I had to cook that and since I was cooking that I threw in the bell pepper too so it could soften a little.  I also sauteed the onions and garlic, so all that took awhile (thirty minutes or so). 

So I followed the recipe pretty closely though I seriously debated putting the zucchini in the crock pot for eight whole hours.  I knew it would just be mush, but I did it anyway.  I also added some celery because I had some and 3/4 cup chicken broth because I had it and I figured it would make it a little soupy.  Here it is before cooking.


And after cooking...big difference right?


It turned out pretty good actually.  The chicken was super bland since it wasn't seasoned but as long as you got some chicken sausage in the same bite it didn't really matter.  I'm not sure the entire dish needs eight hours in the crockpot since even the chicken seemed mushy.  I made rice for my husband to put his on and I ate mine plain.  I would make it again with some exceptions, especially to leave the zucchini out until the last minute.  I'm not sure if it is soup or chili or what but we ate it in bowls.  However, I ate the leftovers on a plate so I guess this is a versatile dish.  I had jicama on the side to enjoy some coolness with the eat of the main dish.  Yum!
