Well, I ate a little (deliciously) heavy earlier today and I wanted something a little lighter for dinner. I had some boiled and shredded chicken in the freezer and some fresh green beans that weren't getting any fresher and thought I could make something with those. I looked online for a few ideas but, in reality, I think I can call this my very own recipe that I made up. I only took one picture of it, but here is my process.
I minced 2 cloves of garlic and cut up 1/2 a yellow onion. I dumped in some kosher salt, red pepper and red pepper flakes. I poured some olive oil in the pan and cooked them on medium to let them soften a little. Then I added the chicken which I had microwaved so it wasn't so frozen. I added 3/4 cup chicken broth, some more salt and pepper and garlic powder and covered it with a lid, and let it simmer on low about 8 minutes. Then I added the cut green beans. I added a little water, covered it and let it simmer for about 10 minutes, stirred it around and let it simmer for another 10 minutes. Then I added a spoonful of mustard (just to see what would happen to the flavor: I don't know if I even tasted it) and let it simmer, covered for five more minutes. Then I added some shaved Parmesan cheese and mixed it around and let it melt for a few more minutes. And there you have it! I thought it was delicious. My husband tried a bite of it (I didn't make it for him) and he thought it was 'pretty good' which is a stunning review for him.
Maybe the next time I attempt this I will try to measure the salt, pepper, red pepper flakes, and garlic powder I put in to make it a "real" recipe.
Sounds good to me. I would like that recipe when you put it together. It would be a good recipe this summer when we have green beans coming out of our ears! :-} mom
