Savory Paleo Crackers

About a month ago I checked out Against All Grain and marked some recipes I wanted to try, one of which I've already posted about.  Not too long after this, my oven broke, so I couldn't try the other recipe I really wanted to try: a recipe for almond flour crackers.  Luckily I found the recipe on her website so you don't have to go find the book at your local library for this one.  The recipe is super easy but I did modify it for my particular tastes.  My oven guy fixed my oven on Friday so I made these on Saturday.  

All you do is throw all the ingredients in the food processor as directed.  In my case I omitted the raisins and used dry rosemary (I just tossed some in, maybe 1/4 tsp).  


Then you roll it out between pieces of parchment paper to about 1/8 inch thick.


Then you score it with your pizza cutter that you don't use anymore because pizza isn't part of your diet.


Here's what it looks like after baking.  Next time I will be a little more cautious with rolling the dough evenly so that it will bake more evenly.


They broke apart easily after about 5 minutes and I inhaled half of them.  They were delicious.  Next time I would used less salt, maybe only 1/4 tsp. of sea salt.  Otherwise, they were delicious.  The ones that were more baked were crispier of course.  For someone who hasn't had crackers in almost two years, these are fabulous.  They are also the texture of shortbread which is awesome.
