I was looking in all of my cookbooks on Sunday to find a new recipe to try. Sometimes I get tired of the Internet, especially when I'm not sure what I want. I found this recipe for Thai Chicken in one of those compilation cookbooks: you ask all your friends to contribute a recipe and then "publish" a cookbook for you and all your friends. Using these types of cookbooks can always be a gamble. You just have to hope that the recipe was recorded correctly (since it goes through multiple cuts and pastes) and hopefully it will turn out the way it's supposed to, especially since the directions can be less than clear. I chose this recipe because it (1) didn't have any sugar in it and (2) it had peanut butter in it! Yum!
Here is the chicken mixture of olive oil, chicken, red pepper flakes and freshly minced garlic (my new favorite thing apparently):
The recipe called for noodles since it is a Thai dish, but I went with rice because it was easier for me. I think it tastes delicious and it was so easy. My husband said he would probably eat it again. I added in some cabbage because when I think of cabbage I think three things (1) Asian (2) Norwegian and (3) Corned Beef with Cabbage. Otherwise I made the recipe as is and enjoyed it. In fact, I enjoyed it so much that I blogged about it 10 minutes after I finished dinner!
So, where is the recipe? I'd be totally willing to try it!
