Gulrotbrød

Today I decided to try a new recipe from my favorite Norwegian blog: Gunns momsemat.  I don't remember where or when I found the blog and I have now made only two recipes from it, but her stuff looks so delicious.  Yum!  The original recipe for gulrotbrød is here if you want to see some Norwegian.  You can also google translate it if you dare.  Gulrotbrød translates into Carrot Bread.  It is literally bread with shredded carrots inside.  I modified the recipe a little for my specific diet; using only whole wheat flour instead of wheat and white.

I was making some cookies for my work and wanted to make something for myself as well.  So began my day of baking bread and cookies.

You start by mixing all the ingredients together.  I love recipes where the order doesn't matter and you can just throw everything in willy-nilly.  In fact, the first thing I did was grate the carrots into the bowl so I wouldn't have to get a plate messy doing that.  Then it has to rise for about an hour. 

 
Here is it divided into loaf pans, after having risen for about an hour (this is when I made the cookies), and ready to go in the oven. 


After baking.  They came out of the buttered loaf pans as slick as oil.  Nothing got stuck to the pan which is always awesome. 


Cutting into the first slice; eating it was like heaven.  I expected to taste some carrots, but I did not.  It tasted like homemade whole wheat bread with a little extra something (carrots and flaxseed).  It was nice and moist and delicious.  I cut up the rest of the loaf and put it in the freezer since I can only have one slice a day.  I gave the other loaf away to a friend of mine.  Can't wait to have some smørbrød tomorrow for breakfast!  Yum!
