Holy Cabbage Batman!

For St. Patrick's Day I decided to celebrate by making a new recipe for fried cabbage.  This implies that I had an old recipe for it but, in reality, I have never made fried cabbage in my life.  I have eaten it though.  So I searched the Internet and found the most perfect recipe.  The ingredients are super easy, but watch out: there's a lot of fat in this delicious side dish.

Here is my chopped onion.

Here I have begun chopping the bacon.  I did chop off some of the fat on the sides since I only needed 8 ounces of bacon and my package was a 12 ounce package.

Here is the onion sizzling in the bacon grease.  I drained the bacon but there was still at least a half cup or more of bacon grease in my skillet.  I drained about half of that and it was the perfect amount.

This is what it looked like when I dumped the cabbage on.  I just about panicked since it was obviously overflowing.  I had a hard time mixing everything up but in the end, it cooked down and my pan was big enough.  For your information I made half a recipe, so this is only one pound of cabbage.

The finished dish.  It was delicious.  Even my husband, who wasn't sure about cabbage, enjoyed it.  I asked if he was surprised and he said, "yes."  There were plenty of leftovers too.  I was afraid that the fat would congeal in the fridge and be totally gross, but it ended up being just great as leftovers too.  Yum!

Here is the full St. Patrick's Day meal in it's splendor.  I made turkey thighs with gravy and the cabbage.  We also had oatmeal muffins.  Yummy!
