Two weeks ago, I was planning a New Year's Eve party and thinking about the food. The party would start late enough that I could eat dinner before everyone arrived so I wasn't planning on making any food that I could eat. I wanted to make some chili for my husband and some brownies. But in the course of the week I decided that I wanted to make something for me too. I searched high and low on the Internet to find a crockpot recipe I would enjoy. I found this tantalizing looking recipe for Paleo Crock Pot Chicken Fajita Soup which was quite similar to my favorite homemade chili: Chicken Taco Chili. So I borrowed a crock pot and made both recipes today.
The party hasn't started yet but I already ate a bowl of the fajita soup and I enjoyed it. It was a little different and a little spicy and I might try a different canned enchilada sauce next time, but over all it was good. However, it did not taste like fajitas.
Here it is before I mixed it all up. It shows some of my ingredients.
After six hours cooking I shredded the chicken and stuck it back in the pot to simmer some more with the lime juice and cilantro.
In my bowl. I did not top it with avocado because I am lazy, but otherwise I followed the recipe almost exactly: I couldn't find a 20 ounce can of tomatoes so I used a 14.5 ounce can. I also used a 14 ounce can of enchilada sauce instead of a 10 ounce can. I don't know how different it would be to follow the recipe exactly since I've only made it this one time.
