You cannot imagine how many restaurants lie about having whole wheat items. I have called every pizza place that claims to serve whole wheat crusts but they always, always, always have white flour in them. This is bad for me. I don't eat white flour and my body doesn't want it either. So I went on a google hunt. You can't imagine how many "whole wheat" recipes there are out there that have white flour in them. It's enough to make you scream, "Augh!"
Luckily I found a few totally whole wheat recipes that I could try. Today, in an effort to alleviate some holiday cooking, I tried one of these recipes: Soft 100% Whole Wheat Dinner Rolls. They have only eight simple ingredients and are put together in the same way as my other roll recipes. Nothing difficult about these. When I started to smell them baking I entered a nirvana that was the definition of bliss; then I tasted one and actually died and went to heaven. YUM! For me they were wonderful. I was so pleased that they came out well and that I have found an acceptable whole wheat roll on the first try!
The dough has risen! Contrary to the recipe, I let my dough rise for about 3-4 hours. The only reason was because I had errands to run and it was inconvenient to make the rolls at the hour mark. There were no negative effects because of a longer rising time.
Here is a tip I learned from the recipe. If you knead directly on a clean kitchen towel you have so much less clean up and it is amazing! The towel does move around, but just try it out. You'll never have to clean your counter again.
I flattened my dough and cut it into roll-like pieces. I had to take from some to add to others but that was just fine.
Before baking.
After baking and smoothing with some softened butter.
And now I have two dozen rolls (way more than we need but that is a-okay) sitting in the freezer waiting to be eaten on Christmas Eve and however many days after that. Check one thing off my Christmas to-do list!
