For Christmas Eve dinner I made turkey thighs and I had some nice, juicy bones leftover. So I decided to do something I have never, ever done before-make turkey soup. The first thing to do, of course, was call my mother, the expert on turkey soup. We chatted. I convinced her to send me her recipe. I geared myself up for the great undertaking of (1) trying a new recipe and (2) making soup from scratch, which is something I have never, ever done.
Well, to my surprise, it turned out delicious. Maybe it's one of those things that you just can't mess up. I didn't have a large soup pan (mine is in storage I guess) so I used my three quart pan to make a two quart soup. It actually worked out pretty well. Here's all the stuff for making the broth.
Once the broth simmered for about 2 hours I started fishing things out of it: vegetables in one bowl and the bones in the other.
Then I separated the meat from the bones. My only problem was that I didn't have enough turkey on the bones to actually have turkey in my turkey soup. I got maybe 1-2 ounces. So I supplemented with a can of turkey I had in my cupboard and I could barely tell the difference.
After the broth was made I started adding things to my soup. I added some wild rice, some carrots, some celery and some cabbage. I have never worked with cabbage so I had to google the best way to cut one up. Isn't it pretty.
And here's my soup on the dinner table. It was great with my whole wheat rolls. What a feast! I highly recommend turkey soup!
