Roasted Vegetables

I have made a discovery that cooks the world over have long know about: roasted vegetables.  Why haven't I tried this before?  I have no idea!  I was perusing the e-cookbook that my dietician created this fall and saw her recipe for roasted carrots.  Well, I had carrots leftover from making that turkey soup last week and I wanted to use them up somehow (I usually end up throwing them away).  I also had cabbage leftover and thought I could add that in too.  Yum, yum, yum.  Who knew how good carmelized onions, cabbage and carrots could be?

Here they are before the baking.  I tossed them with olive oil and salt and pepper and that's it.

After baking.  I thought for sure it was overcooked but the carrots were still a bit al dente which was perfect and the browned cabbage was delicious.  I ate 2/3 of the dish in one sitting.  I could've eaten the whole thing but I wanted to save some for later.  It was really, really good.  I must be crazy, going on about vegetables like this but it is true!  Vegetables are awesome (when cooked correctly)!

  1. They look really good. I'm not a fan of cooked carrots unless cooked in a stew or roast, but I will have to try this.
